Stuffed crust pizza, home made

In these pics I was still working the dough adding extra flour to get smooth elastic, so your final result will have less crust/dough. Also, make sure not to add too much cheese. In theory it sounds great, but too much cheese really doesn't taste good.

The dough texture will come out slightly sticky. Don't add more flour to get a smooth elastic texture.

  • 5 C flour

  • 1 package yeast (2 1/4 tsp)

  • 1 1/2 tsp salt

  • 1 1/2 C warm water (105 degrees)

  • 2 tbsp olive or vegetable oil + additional oil

  • food thermometer

  • 1 (8 oz) can tomato sauce

  • shredded Cheddar cheese

  • shredded mozzarella cheese

  • 4 oz can sliced brown mushrooms

  • 1 package pepperoni

  • 1/4 C chopped red onion

  • parmesan cheese

  • oregano

  • red chile powder

1. Preheat the oven to 475 degrees.

2. Make the dough for the pizza. Mix the 5 cups of flour, yeast, and salt together in a bowl.

3. Mix the warm water and oil into the dry ingredients. Check the temperature of the water with either a food thermometer or by finger. 105 degrees feels luke warm.

4. Knead the pizza dough. The end texture will be slightly sticky.

5. Spread foil over a cookie sheet. If a pizza pan is available, make use of that. Grease the cookie sheet.

6. Put the pizza dough on the cookie sheet. Using hands, spread the dough from side to side of the sheet. Press the dough by hand until there is some excess dough where the dough touches the sides of the pan all the way around. This dough will be folded over to make the stuffed crust.

7. Drizzle a small amount of olive oil over the pizza dough and rub it evenly over.

8. Let the pizza set to rise for around 10 minutes. Grate the desired quantity of Colby and mozzarella cheese.

9. Push the dough again to be sure there is enough dough pushed up at the crust to fold over. Place a line of shredded Colby and mozzarella cheese all along the edge of the pizza. Fold the mounded dough over the cheese line and seal, using water moistened fingers if necessary to seal the cheese crust. You'll get a better taste if you make sure that the dough in the folded crust area is not too thick.

10. Spread the desired amount of tomato sauce evenly over the surface of the pizza from crust to crust.

11. Sprinkle the desired amount of Colby and mozzarella cheese over the pizza.

12. Add the rest of the toppings. Sprinkle the desired quantity of mushrooms and pepperoni over the pizza. Chop the desired quantity of onion and sprinkle over the pizza.

13. Sprinkle the top of the pizza with the desired quantity of oregano, red chile powder, and parmesan cheese. This recipe features mushrooms, red onion, and pepperoni as the toppings. Any mixture of toppings can be used though.

14. Slide the pizza in the oven and bake for between 10 and 15 minutes.
