pineapple cheese casserole

This casserole recipe combines pineapple, sugar, and cheese. I'd thnk dish goes well with ham. Crushed buttery Ritz crackers make the topping.

I guess maybe it belongs over more in the dessert section? Seems about the nutritional equivalent of apple sauce, but with cheese? I'll have to make this once just to see what it is about. Pineapple and cheese? I wonder if it is any good. Pineapple and cheese do go well together on pizza. When I do make it I'll update this page. Let me know if you make it, what it is like.

  • 1 (20 oz) can pineapple chunks

  • 1/3 C sugar

  • 3 tbsp flour

  • 1 C shredded sharp cheddar cheese

  • 1/4 C butter

  • 1/2 cup crushed Ritz crackers

1. Preheat the oven to 350 degrees. Grease a 1 quart casserole dish or an equivalent baking dish.

2. Drain the pineapple, reserving 3 tablespoons of the juice. If the pineapple is in a heavy syrup slightly less sugar may be called for. If the pineapple is in its own juices then the taste should not be overly sweet. Shred the cheese.

3. Combine the sugar with the flour.

4. Slowly stir in the reserved pineapple juice. Add the shredded cheese and pineapple chunks, mixing well. Put the mixture into the casserole dish.

5. Melt the butter in the microwave to make it easier to work with. Combine the butter and crumbs. Sprinkle the crumb butter mixture on top of the pineapple.

6. Bake in the oven for 20 to 30 minutes.
