wilted spinach salad with bacon

This recipe is an alternative to steamed spinach with butter and salt. That is the only way I ever ate spinach as a child in the 80's, was steamed and from out of a can, eaten dutifully swilled in melted butter while imagining the Popeye theme song.

  • 1 lb fresh spinach

  • 4 green onions sliced

  • pepper to taste

  • 5 slices bacon diced

  • 2 tbsp red wine vinegar

  • 1 tbsp lemon juice

  • 1 tsp sugar

  • 1/2 tsp salt

  • 1 egg

1. Slice the green onions.

2. Hard boil an egg and chop it. Put the egg in the refrigerator while you finish the recipe.

3. Wash the spinach and cut off the stems. Dry the spinach on paper towels. Spinach can be dirty and gritty if not fully washed.

4. Tear or cut the spinach into bite size pieces and place the pieces in a bowl.

5. Add the sliced green onions to the bowl.

6. Cover the bowl and place it in the refrigerator to chill.

7. At serving time fry the bacon crisp in a skillet over medium or medium-high heat.

8. Remove the bacon and crumble it. Do not turn off the heat.

9. Add the vinegar, lemon juice, sugar, salt, and crumbled bacon to the skillet. Stir the ingredients together.

10. Add the spinach to the skillet. Cook the spinach until the leaves are coated and wilted.

11. Place the spinach mix in a serving container and sprinkle the chopped egg on top.
