German pound cake is difficult to find in most of the US. Often making uncommon dishes is the only way to try them.

  • 1 C butter

  • 1 C sugar

  • 1 C confectioners' sugar

  • 4 eggs separated

  • 1 tsp vanilla extract

  • 1 tsp almond extract

  • 3 C flour

  • 2 tsp baking powder

  • pinch salt

  • 1 C milk

  • 48 whole almonds

1. Preheat the oven to 350.

2. Have all ingredients be at room temperature before beginning the recipe.

3. Separate the egg yolks from the egg white. You can do this by gently cracking an egg over a bowl. Slowly pass the egg yolk from one half of the shell to the other, making sure not to pop it. Once all the egg white has dropped into the bowl, place the yolk into another bowl.

4. In a large bowl, cream the butter. This means to mix it until it is creamy and soft. A hand mixer will do this quickly.

5. Mix the confectioners' sugar with the regular sugar.

6. Gradually add the sugar to the butter, mixing well.

7. Add the unbeaten egg yolks, one at a time, to the bowl. Beat the mix until it is smooth.

8. Add the almond and vanilla extract to the bowl, and mix well.

9. Measure out the flour you are going to use. Fluff the flour with a utensil, and do not pack it when you measure it. This will affect the final taste, if packed flour is used.

10. Mix the baking powder and salt with the flour.

11. Starting with the flour mixture, alternately add the flour mixture and milk to the creamed butter mixture. Mix well.

12. Beat the egg whites until they are stiff. A mixer needs to be used.

13. Fold the egg whites into the batter and mix well.

14. Grease a 12-cup Bundt Pan.

15 . Place 24 whole almonds in the bottom of the pan, securing each with a dab of butter.

16. Place another ring of remaining almonds on the side of the pan.

18. Pour the batter into the pan and bake for 1 to 1 1/4 hours or until the cake tests done. A cake tests done when a toothpick or knife inserted in comes out clean.

19. Cool the cake in a pan for 10-15 minutes. Then turn it out onto a wire rack or serving plate to complete cooling.

20. Sprinkle with confectioners' sugar.
