That's my brother. He went on a company fishing tour and did most excellent, caught a lot of tuna. We made the fillets in lemon, butter, salt, and pepper, and invited everybody in the family.

I've made the sorry charlie casserole, my clam chowder, and the baked tilapia.

I spotted salmon in the must sell now section of the grocery store on sale for $0.99/lb. Not having a good salmon recipe, I decided to try the above site's recipe. I cooked the whole salmon I had in foil with no seasoning and then picked out the flesh. I used masa harina instead of corn meal as that was what I had on hand. I seasoned the mix with a good dose of lemon pepper and salt. I fried in enough vegetable oil to slightly cover the patties initially. This recipe came out fine! I recommend it. I made a large batch and froze it, the kids got the occasional salmon burger in their lunches over the next few months.

I'm thinking to try it with other kinds of fish, especially white flesh fish or catfish, to see if it'll make just as good burgers. Additionally thinking of a way to adjust the recipe seasoning for fried fish taco patties eventually. A good standard salmon burger recipe, potentially adaptable for a variety of fried fish meals.

Just made this, first taste test is surprisingly good. I had a can of salmon I didn't know what to do with, and a small flat of salmon chunks in the freezer from some sale. I was out of dill so substituted fennel seeds.

The seasoning is average, but the link is because the instructions are spot on to get a breaded golden brown fried fish fillet. This recipe made me finally able to bread and fry fish without overcooking them or having the coating fall off or mucking about with eggs, just a nice golden brown perfectly cooked intact fillet. Get some oil cooking to medium. Put some seasoning with flour. Shake salt and pepper on the fillet, roll it in the flour, put it in the pan in the pre-heated oil, and cook it four minutes per side. They come out lovely. Next is experimenting with different seasonings. I was suspicious of cumin on this one but it was fine. I'd want to try this one with the seasoning mix with paprika as well. Actually really happy I can finally do a decent job frying fish.
