sloppy joe
This sloppy joe recipe is different from the usual sloppy joe of pulled pork and BBQ sauce served on a bun. The recipe was created sometime in the 1970s or 1980s, and food trends of the time are apparent in the canned, preserved, and brand name ingredients. Rather than sandwiches, a bed of crushed Fritos corn chips completes this recipe.
1 lb ground beef
1/3 C chopped yellow onion
1 bottle (8 oz) taco sauce
1 can green chiles (4 oz)
1/2 tsp salt
1/4 C shredded cheddar cheese
1/2 C corn chips (Fritos)
1. Chop the onion. Shred the cheese.
2. Brown the ground beef and the chopped onion in a large skillet over medium-high heat.
3. Add the taco sauce, green chiles, and salt to the skillet. Stir the ingredients together. When the mixture becomes bubbly reduce the heat to medium-low and simmer covered for 10 minutes, stirring occasionally. If necessary, adjust the heat up or down.
4. Crush the Fritos corn chips and place them in a serving dish.
5. Pour the ground beef mixture over the corn chips. Sprinkle the shredded cheese over the ground beef.
