deviled chicken

This is a good recipe for chicken leftovers.

  • 2 C cooked shredded chicken

  • 1/2 C mayonnaise

  • 3 tbsp butter or margarine

  • 2 tbsp country-style Dijon mustard

  • 1 pinch cayenne pepper

  • 1 C fresh bread crumbs

  • 1/4 C chopped fresh parsley

  • 2 tbsp butter or margarine

1. Preheat the oven to 400 degrees. Grease a 9' pie pan or 10' quiche pan. If not available, use another baking dish of similar size.

2. Prepare the ingredients. If the chicken is not already shredded, shred the chicken by hand. Chop the parsley and crumble a cup of bread crumbs. Melt 3 tablespoons of butter in the microwave.

3. Stir together the shredded chicken, mayonnaise, melted butter, mustard, and pepper.

4. Spread the chicken mixture into the pan.

5. Melt two more tablespoons butter. In a small bowl stir together the bread crumbs, parsley, and 2 tablespoons butter. Sprinkle over the top of the deviled chicken casserole.

6. Bake the deviled chicken dish in the over for 20 to 25 minutes, or until golden brown and heated through.
