Grandma's zucchini dish casserole

The title of this recipe on the notecard I transcribed it from was 'Zucchini Dish.' It is a kind of casserole. The main flavors in the dish are zucchini, dill, and chile. The savory is added through the bacon and dairy ingredients. The mentioned brand names are decended from my grandma.

  • 4 zucchini

  • 1 C shredded cheese

  • 2 eggs

  • 1 C cottage cheese

  • 1/2 tsp dill

  • 1 C diced Ortega chile

  • 3 slices bacon

1. Preheat the oven to 350 degrees. Grease a baking dish.

2. Fry the 3 slices of bacon until crisp. Remove the bacon and set to cool. Crumble the bacon and set it aside.

3. Slightly beat the two eggs. A slightly beaten egg is an egg where a fork has been used to beat the egg until the whites and yellow have been just beaten.

4. Shred the cheese.

5. Combine the rinsed zucchini, cheese, slightly beaten eggs, cottage cheese, dill, chile, and bacon crumble. Stir well and pour into the baking dish.

6. Bake the dish in the oven for 30 minutes.
