Dale's potato salad

There are many different kinds of potato salad. Ingredients range from olives to pimentos, to vinegar and Miracle Whip. I personally don't care for olives or Miracle Whip. This recipe relies on eggs and chives to boost the creamy potato flavor. It is my step-father's recipe. He's from Canada, so I guess you could call this Canadian potato salad.

The recipe is to taste, and all of the ingredients can be adjusted as desired. That means we never measure ingredients but always do these to taste, so go ahead and do it to taste also. Remember to always start easy with the salt and mayonnaise. FYI, chives are green onions.

  • 7 medium Russet potatoes

  • 2-3 eggs

  • 1/2 C mayonnaise

  • 1/4 tsp salt

  • 1/8 tsp pepper

  • 1 bunch chives

1. Fill a large pot with water and set it to boil over medium-high heat.

2. While the water is heating, rinse off the potatoes and peel them. Cut the potatoes into pieces about an inch thick or so and fairly homogeneous in size. How thick the potato chunks are dictates how long it will take for them to boil.

3. When the water is at a rolling boil add the potatoes. Boil the potatoes until soft, approximately 10 to 20 minutes. Check doneness by poking with a fork. The potato is done when the fork inserts easily.

4. Place the eggs in water in a smaller pot. Bring the water to a boil over medium-high heat and boil the eggs until done, around 10 minutes or so. When the eggs are finished boiling, drain off the hot water and leave the eggs to cool in cold water. If you add eggs to boiling water they're more likely to break.

5. Rinse and chop the chives. Peel and chop the eggs into fairly small pieces.

6. When the potatoes are done, drain the water off. Place the potatoes in a bowl.

7. Combine the chives, potatoes, and eggs. Add the mayonnaise, checking taste. Different people have different tastes on mayonnaise in potato salad. Add the desired amount of mayonnaise.

8. Add the salt and pepper to the potato salad, again to taste. Stir all the ingredients together well. Potato salad can be served hot and cold.
