oven fried fish fillets

This is a recipe for smaller fish fillets such as tilapia, pan fish like bluegill and crappie, or catfish. Larger fish fillets (steaks) such as salmon and tuna require a different cook time.

  • small fish fillets (1/3 lb is one serving)

  • 1/4 C half & half

  • 1/2 C seasoned bread crumbs or crushed corn flakes

  • 4 tbsp butter

1. Wash and pat dry the fish fillets with a paper towel.

2. Dip each piece in the half & half and then in the seasoned bread crumbs.

3. Let the fish dry on a rack for a 1/2 hour. The coating becomes firmer and less likely to crumble when allowed to dry and set.

4. Preheat the oven to 350. Melt the butter. Set the butter on top of the oven to keep it warm and melted.

5. Place the fish on a broad baking dish or on a cookie sheet with raised edges. If a cookie sheet is used, line the sheet with foil and grease it. Bake the fish until firm and golden, around 20 minutes, basting twice during the bake with melted butter.
