Herb crusted baked stuffed chicken bedded in vegetables. Not a recipe, spontaneous.

We eat a lot of chicken, so plenty of chicken recipes here. The bread dressing is made every year, and have made a good portion of these recipes.

To check if chicken is done visually you do a slice and check. For poultry you don't want any pink, the meat should be white or the equivalent. Sliced next to the bone the juices should run clear. If cooking a whole bird the legs should rotate freely in the socket. 375 oven, foil covering initially.

To use the temperature method, stick the thermometer into the thickest part of the meat, next to the bone if there is a bone. 165 degrees is done.

Not bad. I only had 12 ounces of turkey so I added 4 ounces of mild sausage. I used a 15 ounce can of regular tomato sauce, a 14.5 ounce can of corn, a combination of green and yellow onion which was what I had on hand, and a regular can of refried beans. I seasoned the turkey mix with my usual Mexican blend of cumin, cayenne, chile powder, and a little of garlic powder, red chile flakes, and pepper. Served with lettuce and tomato and cheese on soft tacos the turkey mix and beans were tasty.

This is delicious, I recommend. I used a pound of ground turkey and a pound of leftover turkey, just one cup of chicken broth, sauteed the onion, celery, and veggies with the ground turkey, adding the garlic later, and last the leftover turkey. With sour cream and lime it was very good.

Salt and pepper, rosemary, sage, thyme, oregano, garlic, and basil; using less basil and oregano.
