baked chicken with cornflake coating

This is a basic recipe. The type and quantity of chicken pieces is to suit whatever you have on hand at the moment.

  • 1/4 C margarine

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • chicken pieces

  • 1 C crushed cornflakes

1. Preheat the oven to 375. Line a shallow long baking pan with aluminum foil.

2. Crush the cornflakes, and melt the margarine in the microwave.

3. Combine the margarine, salt, and pepper. Brush the chicken pieces with the butter and then roll them in the cornflakes.

4. Place the chicken skin side up without sides touching in the aluminum lined baking dish.

5. Bake in the oven for 1 hour. At 1 hour check the chicken for doneness. There are several ways to check for doneness. Visually check for doneness by piercing the deepest part of a chicken piece immediately next to the bone. The chicken is done when the flesh is white and the juices are clear. Another method of checking for doneness is to insert a meat thermometer into the thickest part of a chicken piece next to the bone. Chicken is done when it temps at 165.

6. Remove the chicken pieces from the grease and allow to drain before serving.
