battered potato slices

In this recipe potatoes are cut into slices, battered, and then oven baked. The quantity of potatoes used can be adjusted as desired.

  • 3 C cornflakes

  • 1 tsp paprika

  • 1/4 C butter

  • 3 tbsp parmesan cheese

  • 1/4 tsp garlic salt

  • 3 - 5 Russet potatoes

1. Preheat the oven to 375 degrees.

2. Place the cornflakes, parmesan cheese, paprika, and garlic salt in a blender or food processor and process until well and thoroughly mixed. Put the mixture in a bowl.

3. Rinse the potatoes and then cut them into slices. The thinner the slices are the more rapidly they will cook and the more space they will require on the baking sheet. Slices approximately 1/4 to 1/3 inch in thickness work well.

4. Melt the butter in the microwave.

5. Dip the potatoes first in the melted butter and then in the cornflake mixture.

6. Place the battered potato slices on a baking sheet. Line the baking sheet first with foil to make for easier clean up if desired. Do not stack the slices on top of each other. Bake for 20 to 25 minutes or until done.
