oatmeal pie

This one seems like an oatmeal cookie on steroids. The main binding agents are eggs and the oats. The sweeteners are the brown sugar, sugar, and coconut. The recipe is sweet. The unbaked pie crust can be either store bought or homemade. A pie crust recipe is at the bottom of this page.

  • 3/4 C sugar

  • 1/4 tsp salt

  • 3/4 C milk

  • 3/4 C shredded coconut

  • 3/4 C brown sugar (packed)

  • 3 eggs

  • 3/4 C oats

  • 1 tsp vanilla

  • 1 unbaked pie shell

1. Preheat the oven to 350 degrees.

2. Beat the eggs with a hand mixer, whisk, or fork.

3. In a bowl combine the sugar and tightly packed brown sugar. Stir in the beaten eggs and the milk. Mix well.

4. Add the oats, coconut, and the vanilla extract. Stir all of the ingredients together thoroughly.

5. Pour into the pie crust and bake for 40 minutes or until the pie shell is brown on the bottom.
