twice baked macaroni and cheese

When I was a child my mother would occasionally serve us tv dinner servings of macaroni that came in a round foil dish and was baked in the oven. I loved them. This is an effort to get that taste into regular macaroni and cheese. The kids like it a great deal. Don't put too much cheese in for the second bake, that doesn't taste good. You're just putting in enough to zest up the taste.

1. Cook the macaroni as directed on the package.

2. Preheat the oven to 375 or 400.

3. Shred some cheddar cheese. I never measure, so it is to your taste.

4. Put the macaroni in a baking dish. Add some shredded cheese, parmesan cheese, salt, and pepper to the macaroni. Stir it all together. Top with some more shredded cheese, parmesan cheese, salt, and pepper.

5. Bake in the oven until a crust just starts to develop. At least 20 minutes.
