shepherd's pie

Shepherd's pie was originally an English dish. Wiki says it was called cottage pie, and is a kind of meat pie. Since potatoes only came to the menu in Europe with the discovery of the New World I'm assuming they most likely replaced a grain, bread, or pie crust in the recipe. Regardless, shepherd's pie is good. This particular recipe is at minimum 30 years old.

  • 1 1/2 lb hamburger meat

  • 1 small diced onion

  • 6 oz (1 1/2 cans) mushrooms stems & pieces

  • 1 package dried onion soup mix

  • 1/8 tsp garlic salt or powder

  • 2 cans mushroom soup

  • 4 oz mozzarella cheese

  • 5 big Russet potatoes

1. Rinse and peel the potatoes. Chop them and put them in a pot to boil until tender. Potatoes are done when a fork inserted goes in smoothly without meeting resistance. Turn off the heat and drain the water.

2. Dice the onion. Shred the mozzarella cheese.

3. When the potatoes are done, mash them with a half cup of butter and 4 oz (1/2 cup) of shredded mozzarella cheese.

4. Add the diced onion to the potato mix also and mix all the ingredients together.

5. Preheat the oven to 375 degrees.

6. Brown the hamburger meat in a skillet over medium-high heat. When the hamburger meat is fully cooked drain off the fat.

7. Add the mushrooms, the package of dried onion soup mix, the garlic powder, and the 2 cans cream of mushroom soup. Mix it all together.

8. Bring the mixture to a bubble, and simmer it for 5 minutes. Turn off the heat.

9. Put the hamburger mix in a baking dish. Put the potato mix on top of the hamburger mix, and level it off.

10. Add additional mozzarella cheese to the top of the potato mix if desired.

11. Put the mix in the oven and bake until bubbling, around a half hour.

Current Lazy Work Night Shepherd's Pie

The recipe above was the one in the dusty family box. My lazy current work night version of shepherd's pie that I make is as follows. Don't overdo the gravy. Seriously, you can always add more later to taste. Go easy. Too much is nasty, same as too much sugar. Just bake it all together for a bit at 375 so it is nice and bubbly. The kids like this one, and it is pretty fast to make, and you have three food groups in there and nobody complaining about eating their vegetables in amongst savory bits of mashed potato coated meat and juicy gravy.
