date bread

This is a recipe from my grandparents long since passed. I remember Grandma making this in the 1980s for the holiday season.

  • 1 tsp baking soda

  • 1/4 C orange juice

  • 3/4 C boiling water

  • 1 C sugar

  • 2 tbsp shortening

  • 1 tsp vanilla

  • 1 egg

  • 2 C flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 C walnuts

  • 1 C chopped dates

1. Preheat the oven to 350.

2. Boil 1 cup of water.

3. Place the baking soda in a measuring cup. Place the juice of one large orange (1/4 C) in the measuring cup. Add the boiling water until 1 cup of fluid is present in the measuring cup.

4. Place the dates in a bowl. Pour the orange juice mixture over the dates.

5. Combine the sugar, shortening, vanilla, and egg in a large bowl. Cream the sugar mixture.

6. If the dates are not already chopped, chop the dates.

7. Add the flour, baking powder, salt and nuts to the creamed sugar mixture. Combine the ingredients.

8. Add the date mixture to the other ingredients and stir well.

9. Line two loaf pans with wax paper.

10. Fill each pan 1/2 full of the batter.

11. Bake the date nut bread in the oven for 30 minutes.

12. Let the date nut bread cool in the pans.
