The burrito supreme sold at Taco Bell is correctly portioned when it weighs at least 8.1 ounces including the wrapper, or a half pound. The wrapper paper is 0.1 ounces. The quantity of some ingredients in this recipe is not listed because the amount used is a personal preference and also depends on the quantity of burritos prepared. Add spices to taste.

  • flour tortillas

  • 2 lb hamburger beef

  • 1 can refried beans

  • cumin

  • red chile powder

  • serrano or anaheim chile powder (optional: this is the hot hot chile)

  • salt

  • sour cream

  • iceberg lettuce

  • white onion

  • cheddar cheese

  • tomato

  • 1 small can red/green chile sauce

1. Chop the desired quantity of tomato, lettuce, and onion. Shred the desired amount of cheese.

2. Brown the hamburger in a pan over medium-high heat. Once the hamburger is fully cooked drain off the fat.

3. [This step is not required, only if you feel like it] If desired, use a hand mixer or a food processor to slightly process the hamburger so that it is a more uniform texture and no longer consists of large lumps. DO NOT over process the meat. Be careful. If the meat is over processed it will have an unpleasant mush texture. You're not making chub. I learnt this the hard way using a hand mixer on mashed potatoes and getting this nasty "whipped" texture. Make sure not to over process the meat, you'd just be doing a few pulses.

4. Add the spices to the meat. Adjust to taste cautiously. If the beef is too dry add a small amount of beef broth or water to reach the correct consistency. If desired, taco mix packets can be substituted for the homemade spice mix.

5. Heat the refried beans in the microwave or on the stove in a pot. Heat the red or green chile sauce.

6. Heat a tortilla for 10-20 seconds in the microwave to make it warm and supple. If you try to roll an unwarmed tortilla it will rip.

7. Add 1 1/2 ounces beans, 1 1/2 ounces meat, red or green sauce, onion, sour cream, lettuce, tomato, and shredded cheese to the burrito. Make sure the ingredients are evenly spread. Leave at least 1/2 inch of margin free of ingredients around the edges.

8. Fold the burrito and serve. Salsa is always good.
