garden vegetable lasagna

I made this one up when both the neighbors and I had garden super abundance. It was fantastic but I don't remember anymore exactly the portions I used, so waiting until I make this again some day to final draft it, put the ads in and the message board, and link it up on the main page. Kids, this is the recipe for this as best I remember what the hell I did. We were living at Gramma's house at the time in Lemon Grove, and she had me grow a large garden remember? Then the neighbors gave us the giant zucchini and yellow squashes.

  • 1/2 box lasagna noodles

  • spaghetti sauce

  • 1 4 oz can tomato sauce

  • 1 flat sliced mushrooms

  • 1 small flat chopped beef (not ground hamburger)

  • 1 bratwurst sausage

  • garlic

  • olive oil

  • yellow squash

  • zucchini

  • 1/3 yellow onion

  • cherry tomatoes

  • Cheddar cheese

  • Parmesan Romano (I'd written down rosano? thinking I meant romano)

  • 2 eggs

  • mozzarella

  • red chile powder

  • oregano

  • pepper

1. Boil some lasagna noodles according to box instructions. Because you're going to be including coins of squash to partially replace the noodles, cook around 1/2 as many noodles as usually would go into a lasagna. I made too many myself, they didn't fit, so going with 1/2 a box.

2. Chop the yellow squash and zucchini into coins. Chop the onion. Cut the cherry tomatoes in half. Mince the garlic.

3. Put some olive oil in a fry pan and put it to medium high heat. Break up the bratwurst sausage and saute it, the chopped beef, and the onion. When it is about half way done add the garlic. Cook until done.

4. Scramble the eggs together with a fork. Grate any cheese that needs to be grated. Add the Parmesan Romano, cheddar cheese, and mozzarella to the eggs. I forgot to buy the ricotta at the store, so no ricotta. It tasted good like this. Mix together well.

5. Layer in the vegetables, meat, spaghetti and tomato sauce, noodles, and cheese. Sprinkle chile powder, oregano, and pepper over each completed layer. Don't recollect the order I did it in. Top it with sauce, cheese, and seasonings. Cover the pan with foil.

6. Preheat the oven to 375. Bake for like an hour or something, removing the foil for the last 15 minutes of cook.

[draft] Garden Vegetable Lasagna (made this a couple nights before the Louisiana greyhound): part of box lasagna noodles, over half of a leftover large spaghetti sauce plastic container, a small 4 oz tomato sauce can, sliced mushrooms flat, small flat chopped beef (not hamburger), one bratwurst sausage, minced garlic, olive oil, part of 2 small yellow squash, part of 1 immense zucchini, 1/3 yellow onion, some cherry tomatoes, Cheddar cheese, Parmesan Rosano, 2 eggs, Mozzarella. Red chile powder, oregano, pepper. Damn fantastic.
