**A personal favorite. I went easy on the fried onions this time. I usually do a more liberal coating of fried onions using the whole can.**
One of my grandparents was a tuna fisherman for a time, so a fair share of tuna recipes. And my grandma liked zucchini quite a bit, grew it too.
The recipes I've tried so far are the sorry charlie tuna casserole, the tater tot casserole, the hamburger casserole, the lasagna casserole, and the chicken casserole with sour cream and Ritz crackers. They're all good. The sorry charlie and the chicken with Ritz are part of rotation.

A nice casserole for a pork roast. The kids will like it. I used a slightly different frozen vegetable mix recipe. It came out fine. Kind of a shepherd's pie taste. I'm not raving about it, but it did the job.
When I make this I use chicken tomato bouillon. Last time I made it I chopped up onion, a green bel pepper, and tomatoes because that's what I had without going to the store. I fried the onion and bel pepper in the lard, then added the spices to bloom them and the rice to brown it, and then the liquid and tomatoes. I don't add onion flakes or salt (the bouillon is salty), but do add Mexican oregano, chili powder, anaheim chili powder, and coriander. Besides that I follow the recipe. The small can of tomato sauce works. Is pretty simple.
