yam and apple casserole

This recipe has a sweet flavor that combines yams, brown sugar, and apples. The meal is lacto-ovo vegetarian, with the only animal protein present being butter. Substituting the butter for a vegetarian alternative will make this recipe vegan.

  • 4 medium yams

  • 2 medium yellow apples

  • 1/4 C firmly packed dark brown sugar

  • 1/2 tsp mace

  • 1/2 stick of butter

1. Bring a pot of water to a boil over medium-high heat. Rinse the yams. Submerge the uncut yams in the water and boil until almost tender, about 25 minutes. Remove the yams from the water and allow to cool.

2. When the yams have cooled remove the skins. Cut the yams into 1/2 inch thick crosswise slices.

3. Preheat the oven to 350 degrees. Butter a casserole dish.

4. Rinse, peal and core the apples. Cut each apple into six rings.

5. Layer the yams and apples in the buttered casserole dish, dotting them with pats of the butter and sprinkling the layers with the brown sugar and mace.

6. Bake covered in the oven for approximately 1 hour.
