beef stroganoff

Beef stroganoff originated in Russia and is typically served with noodles. The main flavors which typify the dish are meat, onions, and a rich sour cream sauce. The shortening in this recipe can be substituted for butter or margarine, no problem. The quantity of butter or shortening used can be reduced to lessen the fat content of the meal. Fresh mushrooms can be substituted for the canned mushrooms with a preliminary prep to get them ready. I remember this recipe from my Aunt's house. I called her up and had her recite it back to me to get it right.

  • 1 lb ground round (10% - 15% fat)

  • 1/2 C chopped yellow onion

  • 2 tbsp flour

  • 1/4 C shortening

  • 1 can cream of chicken soup

  • 1 (4 oz) can sliced mushrooms

  • 2/3 C sour cream

1. Chop 1/2 cup of onion.

2. In a large skillet brown the hamburger beef. When the hamburger beef is cooked drain off the fat and remove the beef from the skillet.

3. Add the desired amount of shortening or butter to the skillet and cook the onions and mushrooms until the onion is translucent.

4. Add the 2 tablespoons of flour to the skillet and stir together.

5. Add the hamburger back to the skillet and stir everything together.

6. Add the can of cream of chicken soup and the sour cream to the skillet. Stir until thickened and bubbly.
