ambrosia salad

Ambrosia salad is a kind of fruit salad. The creamy base used in this recipe is sour cream. Ambrosia recipes began to appear towards the end of the 1800's. Back then this recipe was a fusion cuisine, combining Old World ingredients such as sour cream and grapes with New World ingredients such as coconut and pineapple. The identifying ingredient to distinguish an ambrosia recipe from other kinds of fruit salad recipes is the presence of coconut. At the turn of the 20th century coconut meat was experiencing a good deal of popularity. Coconut was still a relative newcomer to Western cuisine.

  • 1 C sour cream

  • 1 C seedless grapes

  • 1 C chopped walnuts

  • 1 C shredded coconut

  • 1 C pineapple tidbits

  • 1 C mandarin oranges

1. Drain the fruit thoroughly. If the walnuts are not already chopped, chop the walnuts.

2. In a large bowl combine the sour cream, seedless grapes, chopped walnuts, shredded coconut, pineapple tidbits, and mandarin oranges. Stir all the ingredients together carefully and thoroughly.

3. Cover the bowl with plastic wrap and place in the refrigerator to chill.
