chicken cordon bleu

In French cordon bleu means blue ribbon. Apparently that's a comment on the quality of the recipe. The shaved ham on the ingredient list of the recipe means extremely thin cut ham, or deli sliced.

  • 1 flat of boneless skinless chicken breasts

  • sliced Swiss cheese

  • 1/2 C flour

  • 1 egg

  • 1/2 tsp salt

  • 1/8 tsp pepper

  • 1 package shaved ham

  • 1/2 C bread crumbs

  • 1/2 C parmesan cheese

  • 4 oz butter

1. Rinse the chicken breasts off. Place the chicken breasts between two sheets of plastic wrap. Pound them until they are approximately 1/4 inch in thickness.

2. Sprinkle the flattened chicken with salt and pepper.

3. Place 1 slice of Swiss cheese and 1 slice of shaved ham on each breast.

4. Roll each chicken breast up. Tie the rolls with kitchen thread. Toothpicks can also be used if kitchen thread is unavailable for cordon bleu. The toothpicks should protrude only a short distance from the skin of the chicken. Tuck the ends of the rolled chicken in.

5. In a bowl mix the flour, bread crumbs, and parmesan cheese.

6. Beat the egg with a hand mixer or fork until stiff peaks form.

7. Dip each chicken roll in the beaten egg and then in the flour mixture. Dredge the chicken rolls in the flour mixture, making sure to thoroughly coat them.

8. Place the butter in a large fry pan and melt over medium heat. Add the chicken rolls and cook, turning evenly. Cook will be approximately 20 minutes.
