cherry pie

This is a simple cherry pie. The recipe cooks the crust with the pie and has a crust top. One serving of sour pie cherries (1 cup) provides 37% of the daily value of Vitamin A, 9% of the daily value of Vitamin C, 3% of the daily value of calcium, and 19% of the daily value of iron.   • 1 1/4 C sugar

  • 1/4 C flour

  • 1/4 tsp cinnamon

  • 1 can (1 lb) red sour pitted cherries

  • 1/4 tsp almond extract

  • 1 1/3 tbsp butter/margarine

  • 1 pie double crust

1. Preheat the oven to 425 degrees.

2. If making the pie crust, follow recipe directions to prepare the crust bottom and top. The pie crust is not pre-baked.

3. In a saucepan combine the sugar, flour, cinnamon, and sour cherries over medium-high heat. Cook, stirring, until the mixture thickens and boils.

4. Stir in the extract and then pour the mixture into the pie crust. Dot the mixture with several pats of butter.

5. Cover the mixture with the top crust. Pinch the top and bottom crusts together using no water, and make sure to slit the top crust to allow steam to escape during bake.

6. Bake in the oven for 30 to 35 minutes.
