glazed ham

This glazed ham recipe uses prepared mustard. Prepared mustard is mustard like the brand Colman's Mustard. It's a particular kind of mustard which has additional ingredients added to it. Here's a decent link that explains what it is http://answers.yahoo.com/question/index?qid=20080201130715AADA9P0. The size of the ham is optional.

  • 1/2 C prepared mustard

  • 1/2 C honey

  • 1 tsp salt

  • 1/2 tsp rosemary leaves

  • 1/4 tsp pepper

  • ham

1. Preheat the oven to 325 degrees.

2. In a small bowl combine the prepared mustard, honey, salt, rosemary, and pepper. Reserve the sauce. The ham will not be glazed until later in the cook.

3. Put the ham in a baking dish on a rack to keep the meat out of the cooking juices. If you don't have a rack you can use rolled up foil. It works.

4. Bake the ham for 20-30 minutes per pound. If preparing a pre-cooked ham, follow the directions on the package regarding oven temperature and length of cook. Otherwise, when a meat thermometer inserted to the thickest part of a ham, or next to the bone if there is a bone, reads at 140 degrees the ham is done. As the ham will be cooked an additional space of time to glaze it, don't overcook the ham in this step. Remove it promptly when it reaches 140 degrees. The temperature for a ham that is not pre-cooked would be 160, but generally most store bought hams are pre-cooked.

5. Remove the ham from the oven. If desired score the ham with a knife lengthwise and crosswise to form a diamond pattern. The purpose of scoring the meat is to enhance the flavoring added by the glaze.

6. Stirring slightly first to remix the ingredients, pour the glaze over the ham, covering it thoroughly.

7. Return the ham to the oven and cook at a temperature of 375 degrees for an additional 20 to 30 minutes or until the glaze carmelizes. Make sure not to overcook the ham or scorch the glaze.
