zucchini boats

Zucchini boats are zucchinis which are cut in half, hollowed out, and stuffed with a mixture. Zucchini boats can be stuffed with a variety of fillings.

  • 2 medium zucchinis

  • 1/4 C chopped onion

  • 1/2 C chopped tomatoes

  • 1/2 C shredded cheddar cheese

  • 1/4 tsp basil

  • 1/4 tsp oregano

  • 1/4 tsp pepper

1. Rinse the vegetables. Cut the zucchini in half lengthwise. Hollow out each half, leaving a shell about a 1/4 inch thick. Chop the pulp.

2. Chop the onions and tomatoes. Shred the cheddar cheese.

3. Mix together the pulp, onions, tomatoes, a 1/4 C of the shredded cheese, and the spices.

4. Fill the zucchini shells with the mixture.

5. Place the stuffed zucchini in a shallow microwave dish and cover tightly. Microwave on high for 5 to 6 minutes.

6. Sprinkle the zucchini boats with the remaining cheese and let stand for 5 minutes.
