nutcracker pie

This is another dessert which is fairly uncommon in the beginning of the 21st century in the United States. You seldom run across it. My mother made it for Thanksgiving 2013 and it was the second most popular pie after the latticed apple pie, and was gone by the next evening. This pie tastes good.

  • 20 Ritz crackers

  • 1 tsp baking powder

  • 1 C chopped walnuts

  • 3 egg whites

  • 3/4 C granulated sugar

  • whipped cream

1. Heat the oven to 350.

2. Clean a large cutting board off. Dry it. Or use another clean dry large flat surface and cover with wax paper.

3. Place the Ritz crackers on the surface and roll them fine. You should be left with about a half cup plus a tablespoon of crumbs.

4. Put the crackers in a bowl and add the baking powder and chopped nuts. Mix the ingredients together.

5. Take the egg whites and beat them until they are stiff. A hand mixer will make this less tedious.

6. Add the sugar to the egg whites and beat it until the mix stands in peaks.

7. Fold the Ritz cracker crumbs into the egg mix. Stir it together thoroughly.

8. Grease a pie plate.

9. Spoon the mixture into the pie plate, leaving the top rough. Don't smooth it out.

10. Bake for 25 minutes, or until crisp.

11. Refrigerate and put whipped cream on top.
