curried chicken salad

This is a good easy recipe for chicken leftovers and would be good at a party with a sack of chips next to it. It's easy to make. If you want you can throw some crushed cashews in. You can adjust the amount of ingredients up and down depending on the amount of chicken on hand, and salt and pepper if desired. I used the meat picked off a small chicken carcass the last time I made this. This recipe is better than store bought curried chicken sandwiches.

  • 1 C chicken

  • 1/3 C mayonnaise

  • 1 stalk celery

  • 2 green onions

  • basil

  • 1 - 2 tbsp curry

1. Chop the chicken. Rinse the celery and green onions and finely chop them.

2. Combine the chicken, mayonnaise, celery, green onions, several shakes of basil, and curry in a bowl. Add the crushed cashews if desired. Mix well.

3. Serve with chips, bread, pita, or use as a sandwich spread.
