broccoli and cheese sauce

A simple broccoli and cheese sauce recipe. You make a roux, add in the cheese, and add in the broccoli. Easy peasy. This is one I never measure by, the ingredients are estimates. Add the cheese to taste.

  • 3 C broccoli

  • ~ 3 cups shredded cheddar cheese

  • 1 C milk

  • 3 1/2 tbsp butter

  • 2 tbsp flour

  • salt

  • pepper

1. Cut the broccoli up. Remove the thick stems. Shred the cheese.

2. Bring water to a boil in a pot over medium-high heat. Add the broccoli. Or you can steam the broccoli. Either way, cook the broccoli until it is tender and a fork passes into it easy.

3. Chop the broccoli and put it in a baking pan.

4. Turn on the oven to 375 degrees.

5. Melt the butter over medium-high heat in a pan.

6. Add the flour and make a roux. That means mix the flour with the butter until you have a paste.

7. Add the milk and stir together until there are no more lumps. Continue heating the mixture and stirring frequently for around five minutes. Stir continuously to avoid scorching.

8. Sprinkle in the cheese. The sauce will turn from white to yellow. Stir a few minutes more.

9. Take the mixture off the heat. Pour it over the broccoli in the baking dish and stir it together. Season with salt and pepper.

10. Sprinkle some shredded cheese over the top. Put the dish in to bake for about 20 minutes, depending on how well done you like the taste to be.

11. Turn off the oven and remove the dish to cool.
