quiche lorraine

A quiche is a savory type of custard pie. A custard is a combination of milk, eggs, and flavorings which is cooked and set. Hence the recipe is a well known custard. The recipe potato pie lorraine is similar to quiche lorraine. The pie shell can be store bought or home made.

  • 1 un-baked pie shell

  • 2 C mashed potatoes

  • 1/2 C light cream

  • 1 tbsp butter

  • 3/4 C cream style cottage cheese

  • 1/8 tsp pepper

  • 1/2 C chopped onion

  • 1/2 C sour cream

  • 2 eggs

  • 1/2 tsp salt

  • 1/8 tsp garlic powder

  • 1/8 tsp cayenne pepper

  • 1 1/2 C shredded Swiss cheese

  • 8 oz crumbled cooked bacon

  • unbaked beans

1. If mashed potatoes are not already prepared, peel several Russet potatoes and cut them into pieces. The smaller the piece the faster the boil. Boil the potatoes until tender and easily fork pierced. Mash the potatoes with a small amount of butter and milk. Set aside.

2. Preheat the oven to 450 degrees.

3. Line the unpricked pie shell with foil and fill with dried beans. The purpose of the beans and foil is to have the pie shell keep its shape while baking. Bake in the oven for 5 minutes. Then remove the beans and foil and bake for an additional 5 to 7 minutes. Remove the pie shell from the oven and reduce the heat to 425 degrees

4. Cook the 8 ounces of bacon crisp and then crumble.

5. Prepare the other ingredients. If necessary, cream the cottage cheese (remove lumps and make texture smooth) by pulsing briefly in a food processor or blending with a hand mixer. Chop the onion. Shred the cheese.

6. In a bowl combine the mashed potatoes, cream, and butter. Set aside.

7. In another bowl combine the cottage cheese, sour cream, eggs, and seasoning. Beat with an electric mixer until smooth.

8. Add the potato mixture and beat for an additional minute to combine the ingredients. Add in the shredded Swiss cheese, chopped onion, and crumbled bacon.

9. Pour the mixture into the warm pie shell and bake for 40 to 45 minutes.
