onion loaf

In this recipe a simple baking powder loaf is covered by an onion, mushroom, and rosemary mixture and a sour cream spread.

  • 1/4 C butter

  • 1 bunch green onions

  • 1/2 tsp rosemary leaves

  • 2 tsp baking powder

  • 1/4 C shortening

  • 2 tbsp parsley

  • 1 egg yolk

  • 2 large yellow onions

  • 1/4 lb mushrooms

  • 2 C flour

  • 1/2 tsp salt

  • 1 C milk

  • 1/2 C sour cream

1. Preheat the oven to 425 degrees. Grease a 13X9X2 pan.

2. Chop the green onions, mushrooms, and parsley. Thinly slice the onions.

3. Separate one egg yolk. Do this by carefully cracking an egg over a bowl. Delicately pass the yolk from one half of the shell to the other, allowing the white to drop to the bowl. When the yolk is separated, set it aside.

4. In a skillet over medium heat melt the butter and add the onions. Sauté for 5 minutes. Add the green onions, mushrooms, and rosemary. Sauté for 5 minutes.

5. In a medium bowl combine the flour, baking powder, and salt. Cut in the shortening until the texture is coarse crumbs.

6. Stir in the milk and parsley. With floured hands pat the dough into a prepared pan. Spread the onion mixture on top.

7. In a bowl blend the sour cream and the egg yolk. Spread over the onion mixture.

8. Bake in the oven for 25 minutes or until golden.
