green rice

This is an easy cook. You combine green salsa and sour cream in a bed of rice. The combination of dairy (sour cream) and rice provides a complete protein. The quantities in the ingredient list are approximations. Add the flavorings to taste as desired. It was a comfort food for me, for a period of time. If you want you can Mexican seasoning flavor it. For me Mexican seasoning is always red chile powder, cumin, and less anaheim or cayenne chile powder.

  • 1 C rice

  • 1/4 C sour cream

  • 1/4 small yellow onion

  • 1 can (4 oz) green sauce

1. Make the rice. If not using instant rice, bring 2 1/4 cups of water to a boil over medium-high heat. Rinse the rice and then add it to the rapidly boiling water. Reduce the heat to medium-low, cover the rice, and simmer for approximately 20 minutes. Taste test to be sure the rice is fully cooked. Then remove the rice from the heat and let it stand covered several minutes. You'll have three cups of rice.

Generally speaking 1 part uncooked white rice to 2 parts water makes 3 parts cooked rice. Some varieties of rice have slightly different ratios.

2. While the rice is cooking, chop the onion.

3. Combine the rice, chopped onion, green sauce, and sour cream. Mix well. Adjust the portions to taste as desired.
