rice and lentils

This is a vegetarian meal. The rice and lentils combo is a complete protein. The fresh vegetables are added to the protein base along with the flavoring agents of lime juice, feta, and cilantro. It used to be comfort food for me when I was vegetarian. I called it goulash.

  • 1 C rice

  • 1 C lentils

  • 1/4 red onion

  • 1 green bell pepper

  • salt

  • pepper

  • lime juice

  • feta cheese

  • cilantro

1. Cook the rice. If not using instant rice bring 2 1/4 cups of water to a boil over medium-high heat in a pan. Rinse the rice and add it to the boiling water. Turn the heat down to medium-low, cover the pan, and cook until the rice taste tests tender, around 20 minutes or so. Then remove the rice from the heat and allow it to sit several minutes to absorb any remaining water. The cook time and water amount will vary depending on the kind of rice being made, but generally the rule for rice is 1 cup uncooked rice and 2 cups water makes 3 cups cooked rice.

2. While the rice is cooking make the lentils. Follow the directions on the package or do as follows. Bring a pot of water to a rolling boil over medium-high heat. Rinse the lentils and add them to the boiling water. Turn the heat down to medium-low, cover the pan, and simmer for around 60 minutes. Remove and drain the lentils when they are done.

3. Rinse, seed, and slice the green bell pepper. Slice the red onion as well. Rinse the cilantro and chop the desired amount.

4. Combine the cooked rice and lentils. Add the desired amount of feta cheese, cilantro, lime juice, salt, and pepper. Add the slices of green bell pepper and red onion to taste as well. The quantities mentioned in the ingredient list are merely suggestions. Mix all the ingredients together and serve warm.
