beef manicotti

Manicotti is the pasta which is shaped like a large tube. The mayonnaise dates this recipe to probably somewhere between the 1960s and 1980s.

  • 1/2 lb hamburger meat

  • 1 clove garlic minced

  • 1 C cottage cheese

  • 4 oz mozzarella cheese, shredded

  • 1/2 C mayonnaise

  • 8 manicotti tubes

  • 1 16 oz jar of spaghetti sauce

  • 1/2 tsp oregano

  • parmesan cheese

1. Preheat the oven to 350.

2. Boil the manicotti following the directions on the package. Be careful not to break the tubes.

3. While the manicotti is boiling, shred the mozzarella cheese.

4. Mince the garlic.

5. Cream the cottage cheese. Put the cottage cheese in a food processor and pulse or otherwise process it to a creamy texture.

6. Put the hamburger meat and the garlic in a frying pan. Over medium-high heat brown the hamburger meat.

7. When the meat is done, remove it from the heat and drain the grease.

8. Mix the creamed cottage cheese, the mozzarella cheese, and the mayonnaise.

9. Blend the hamburger meat into the mixture.

10. Fill each manicotti with about 1/4 C of the mixture. There will be some left over.

11. Place the filled manicotti in a single layer in a baking dish.

12. Sprinkle the manicotti with the left over filling.

13. Cover the manicotti with the spaghetti sauce.

14. Sprinkle the oregano and parmesan cheese over the dish.

15. Cover the dish with foil and bake for 20 minutes.
