cheese balls

This one brings back memories of an aunt's suburban home with large clean chlorine scented swimming pool in the 1980s, and a tray of these set on an outside table near the pool where the family children play in the water under the baking sun. She was still alive when I asked for permission for the recipe. This cheese ball recipe produces a finger food snack good for house guests or social events.

  • 1 (8 oz) package of cream cheese

  • 8 oz cold pack blue cheese

  • 10 oz sharp cheddar cheese

  • 1 C pecans

1. Soften the cream cheese, blue cheese, and cheddar cheese in the microwave.

2. Mix the cheeses together thoroughly. Refrigerate the cheese mixture for a while to make shaping easier.

3. Using clean hands, divide and shape the cheese mixture into the desired number of balls. Several large ones or multiple small ones can be made.

4. If the pecans are not already chopped, chop the pecans. Place the chopped pecans on a strip of waxed paper.

5. Roll each cheese ball over the chopped pecans, pressing firmly to embed and cover the cheese ball with the chopped pecans. Wrap each cheese ball individually in plastic wrap and refrigerate. Cheese balls can be frozen.
