pizza pockets

Fast easy and good, big hit with the kids. I was diddling around with some leftover biscuit dough from making pigs in a blanket and tried this. Very good. It took me less than 20 minutes to make these. You can use whatever kind of cheese you want. The cheese in the ingredients is what I happened to have on hand. I think you could use various pizza topping ingredients with these. Next time I make these I'll get pics up. This makes 12 pizza pockets.

  • 2 C flour

  • 3 tsp baking powder

  • 1 tsp salt

  • 1/3 C oil

  • 2/3 C milk

  • pepperoni

  • Munster cheese

  • Monterey Jack cheese

1. Preheat the oven to 475.

2. Mix together the flour, baking powder, and salt.

3. Add the oil and milk. Stir the ingredients together with a spoon until it comes together in a dough ball more or less.

4. Knead the dough ten times. That means press it out onto the bottom of the bowl and then fold it in half. Repeat that ten times.

5. Roll the dough into an oblong tube shape and cut it into 12 pieces.

6. If needed shred the cheese and thaw the pepperoni you will be using.

7. Put foil on a baking sheet and put the twelve dough balls on there. Press the dough out into circles. You don't want the dough to rip when you fold and press it over the filling, so don't make it too thin. I'd say about four inches wide.

8. Put slices of pepperoni in the middle of the dough. Top with cheese. Initially press the dough along the edges of the circle back up over the filling. Hold the pocket in your hand and press the dough to enclose the filling in the middle. Leave an inch or so size hole on the top. Make sure there are no rips or the cheese will fall out during bake.

9. Bake the pizza pockets 10 to 12 minutes.
