salsa cruda

This is good stuff with tortilla chips. My ex and I used to make this regularly.

  • 8 large Roma tomatoes

  • 2-3 cloves garlic

  • 1 Anaheim chile pepper

  • salt

  • 1/3-1/2 red onion

  • 1-2 limes

  • 1 bunch cilantro

  • plastic gloves

1. Bring a pot of water to a rolling boil. Put the tomatoes in the water and boil them about 5 minutes. Remove the tomatoes from the water when their skins feel loose when prodded and/or are beginning to split. Allow the tomatoes to cool and then strip the skin off of them.

2. Cut the tomatoes into quarters and remove the stems. Use a spoon to remove the seeds and discard them. Chop the tomatoes and place them in a serving bowl.

3. Chop the desired quantity of red onion. Mince the garlic and cilantro. Add the onion, garlic, and cilantro to the tomatoes.

4. Chop the lime(s) and squeeze them into the tomatoes. Make sure not to drop lime seeds in the salsa.

5. Put on plastic gloves or otherwise shield your hands. When handling hot chile peppers you need to protect your hands. Make sure not to touch your face and particularly not your eyes. Chile in your eyes hurts. Remove the seeds and stem from the chile and finely mince it. Add it to the salsa. If that sort of thing doesn't bother you much and you use bare hands, keep in mind that the chile will stay on your hands for several hours despite vigorous hand washing with soap. Don't rub your eyes.

7. Stir everything together. Add salt to taste.
