zucchini fritters

In the Old World the zucchini is commonly known as the courgette. Technically zucchini is a fruit.

  • 2 C shredded zucchini

  • 2 eggs

  • 1/4 tsp salt

  • 1/2 tsp baking powder

  • 1/2 C flour

  • 2 tbsp parmesan cheese

1. Wash the zucchini. Shred 2 cups of zucchini and drain it.

2. If necessary, grate the two tablespoons of parmesan cheese and set aside.

3. Crack the two eggs into a bowl and lightly beat them with a fork or other utensil.

4. Mix together the shredded zucchini, slightly beaten eggs, salt, baking powder, flour, and grated parmesan cheese.

5. Heat cooking oil in a frying pan or a deep fryer over medium-high

6. Put heaping spoonfuls of the zucchini fritter mixture into the oil and fry them until they are golden brown on both sides. Remove them from the oil and allow them to drain oil and cool before serving. They can be served plain or with dipping sauce.
