baked beef and zucchini 'stirfry'

This recipe was good for using up zucchini. If you want to, making your own sweet and sour sauce isn't hard. This recipe is for a giant batch of sweet and sour but quarter it and you'd get about enough for this recipe.

If you used a cut or type of meat that is greasy then drain off the grease after cook. I believe various types of squash could be substituted here if you were looking to use up squash. I've eaten this with sweet and sour sauce, teriyaki, and soy sauce.

  • 1 small flat stew meat cut beef

  • 2 small zucchini

  • 1/2 half large yellow onion

  • 1 flat sliced mushrooms

  • salt

  • pepper

  • oil

  • red chile flakes

1. Preheat oven to 375.

2. Slice all the ingredients into large bite size pieces. Thick slice the zucchini.

3. Mix all of the ingredients together with oil, salt, pepper, and red chile flakes in a baking dish.

4. Bake in the oven until the thickest vegetable fork pierces done and the meat is done. Stir once or twice during bake and shield from direct heat with a cookie sheet in the top rack or foil over the dish. If you secure foil directly over the dish it will cook much faster and be a moister cook.

5. Serve drizzled with the baking juices and desired seasoning, possibly on a bed of rice or noodles.
