tuna casserole

This dish can be served with either tuna, chicken, or ham. The ingredients date the recipe to the '70s - '80s. The large amount of mayonnaise is the most significant tell.

  • 2 C tuna, cubed chicken, or ham

  • 2 tbsp chopped onion (optional)

  • 1 1/2 C cooked rice

  • 1/2 tsp salt

  • Crushed potato chips to taste

  • 1/2 C celery

  • 1 can water chestnuts

  • 1 can cream of mushroom or chicken soup

  • 1 tsp pepper

  • 3/4 C mayonnaise

  • 1/4 C water

1. Preheat the oven to 350.

2. Grease a casserole dish.

3. Prepare an appropriate quantity of instant rice according to the directions provided on the box. Regular rice can also be used.

4. Slice 1/2 cup of celery. If using onion, chop 2 tbsp.

5. In a large bowl combine the 16 oz of tuna/chicken/ham, rice, salt, celery, water chestnuts, can of chicken/mushroom soup, pepper, mayonnaise, water, and onion if using. Stir all the ingredients together.

6. Pour the mixture into the greased casserole dish. Smooth it out.

7. Crush the desired quantity of potato chips. Top the casserole with the crushed potato chips.

8. Place the casserole in the oven and bake for 45 minutes.
