Visually I see pork as done when the juices run clear from a cut next to the bone and the meat doesn't look very red or pink. You don't want to overcook though, pork is different from chicken in that a little pink in the meat is okay that goes along with clear juices in a cut from the thickest area.
140 = pre-cooked ham is done
160 = done
165 = When I'm done , I always cook to this.
A good pork shoulder roast is a savory main dish. Bake it until it hits temperature and serve it up with mashed potatoes in which you've drizzled some of the drippings, or nest it in veggies to bake. You can cut pork shoulder and pork butt roasts into three or four reasonable sized roasts. On one really good bake I'd stabbed it and shoved a bunch of garlic bulbs in it. Then I'd seasoned the roast with garlic powder, salt, pepper, and some sage. Don't do too much sage because it can be bitter. I'd baked it at 400 that time without putting on foil, but it'd started to scorch the baking dish before the fat was rendering, so that the smell called me to attend. On impulse I'd poured a little vegetable oil over it before putting foil over it. I'd always done a liquid before, not an oil. It came out really good, and it was at the point that the fat marbling started rendering and the juices coming out shortly after being put back in the oven. It was good enough that both my daughter and I on trying a nibble out of the fridge sat down for bit just to eat slices of the meat right out of the serving dish, dipped in the drippings.
Riblets or other cuts can have some marinade or BBQ sauce tossed on them, stuck in some foil, and baked at 350 to be the meat dish.

I liked this recipe. Not amazing or to go on regular rotation, but good enough for using up what was on hand when I didn't wish to go to the store. Similar to shepherd's pie. I used a slightly different bag of mixed vegetables, instant potatoes, and bullion. I used about 2/3's as much meat as recommended. Was fine. The taste is pot pie.

I made this as directed except with no onion powder and I used green apples. It is a good recipe and I recommend it. We all enjoyed it.

Quite delicious, pleasant surprise. Made as directed, save used a dutch oven and so many cups of broth for to prevent scorching. Did have to watch for scorching and rotate the meat periodically.

This isn't quite my usual seasoning mix, but with lime juice it came out very good when I had between two and three pounds of pork butt roast cubes to season for tacos. I put chopped up red onion in it too. I baked the pork on a low heat setting with foil over the top. Then I took the pork out of the juice, let it cool, shredded it, and then added back in some of the juice to get it a bit moister. Again, my usual Mexican seasoning mix doesn't have paprika and I usually leave out garlic, but this was good. I used Mexican oregano.
