Spring Spinach Salad with Raspberry Vinaigrette

Serves 4

Baby Spinach

1 avocado, peeled and sliced

2 kiwi, peeled, sliced

About 2 strawberries per plate, cleaned and sliced

1/3 cup chopped walnuts

Combine the ingredients in a salad bowl or plate the salad arranging each item on top of the spinach. Sprinkle the walnuts on top. Drizzle with dressing.

Raspberry Vinaigrette

2 Tbsp raspberry vinegar

2 1/2 Tbsp raspberry jam

1/3 cup vegetable oil

Mix together the three ingredients in a small container.
