Yellowfoot chanterelles

The yellowfoot chanterelles (Craterellus tubaeformi), often named the winter chanterelles, that can be found in the archipelago islands, late in the autumn, early winter, usually from 1st of November to Mid-December.

In November, when the weather is humid and not so cold, the harvesting of Yellowffot chanterelles can yield large quantities. The best way to keep the Yellowffo chanterelles is to dry them. The taste is even better than the fresh ones.

Preparation

  • Pick
  • Brush out dirt
  • Wash
  • Boil for a few minutes
  • Add in dishes e.g. stew or soups
  • Can be frozen after boiling
  • Better kept dried for long periods
