You don't actually need nitrogen to make the atmosphere breathable. It's just an inert buffer gas as far as most biological processes are concerned.
The nitrogen for plants issue isn't a huge one either, provided we fix the existing nitrogen.
Very few plants aspirate nitrogen - that N2 bond is really hard to break.
