Curry chicken wrap

Ingredients
½ lb Chicken breast tenderloin
½ teaspoon Seasoning Salt
½ teaspoon Black pepper
½ teaspoon Garlic powder
2 tablespoon Oil
1 tablespoon Curry powder
½ Carrot
½ small onion
1 small Sweet pepper
½ cup Coconut milk
½ teaspoon Sugar
½ teaspoon Salt
Tortilla or roti
Lettuce
Instructions:
- Slice the peppers, carrots and onions into thin strips (see how here)
- Slice the chicken breast into thin strips
- Season with seasoning salt, black pepper, garlic powder
- Heat the oil in a sauté pan once it’s warm add the curry powder and cook until it becomes very fragrant
- Place the chicken strips into the pan and sauté both side until they are brown and golden
- Toss in the peppers, carrots and onions and cook for a minute
- Add the coconut milk, salt and sugar and sauté until the coconut mild thickens
- Allow the chicken to cool slightly before assembling the wrap
- Place a bed of lettuce down then fill with the curry chicken sauté along with some coconut sauce
- Fold over the front portion then fold in the two sides then finish rolling completely
- Slice in half and enjoy!
Greedy tips:
- If you want your carrots crunchy you don't have to cook them in the curry. Add them to the wrap raw. I do however recommend cooking the peppers with the curry because its adds a lot of flavor.
- The raisins on the side can also be added in the wrap for a nice burst of sweetness
- If you don't have the time to make the roti, feel free to use tortilla wraps or pita bread
