Beef mini meat pies

Ingredients
Beef patty filling
½ onions
3 cloves garlic
7 scallion stalks
1 teaspoon allspice berries
1 teaspoon thyme leaves
¼ cup water
1 lb beef
¾ teaspoon salt
1 ½ teaspoon sugar
¼ teaspoon black pepper
¼ teaspoon smoked paprika
¼ teaspoon cayenne pepper
1 ½ tablespoon oil
1 cup beef stock
8 blended crackers
1 teaspoon browning
Crust
1 Pillsbury pizza dough mix
½ cup Hot water
Oil for brushing
Instructions
Beef filling
- Preheat the oven to 450 degrees
- Prepare the pizza dough and set aside
- Blend together onion, garlic, scallion, allspice berries, thyme leaves, and water
- In a dish lightly mix the ground beef, salt, sugar, black pepper, paprika and cayenne pepper
- In a deep pot heat the oil add the beef and sauté for a few minutes until all the beef has started to cook
- Once there is no red left in the beef add the blended onion mixture and the crackers cover over a low flame and allow to cook for 3 minutes
- Stir in the beef stock, cover and allow to cook again for another 5 minutes. The beef could be creamy and have a green/grayish tint
- Remove from the heat and thoroughly mix in the browning to get a really nice color on the beef filling
- Set aside to cool
Assemble
- Spray a mini cupcake tray with no stick cooking spray
- Roll out the pizza dough as large as possible and cut out 24 circles from it
- Slightly stretch each circle by hand and place in the cupcake tray
- Fill each with a small scoop of beef filling
- Roll the remaining dough and cut another 24 circles from it
- Place on the top of each, tuck in the sides
- Use a toothpick to poke 3 to 4 holes in each top
- Brush with some oil and bake for 10 to 12 minutes or until golden brown
Greedy tips
- I prefer using crackers as opposed to breadcrumbs because I find the blended crackers give a creamy texture to the filling. Bread crumbs to me soaks up all the moisture and adds nothing to the beef filling.
- Don’t worry if the tops raise a bit from the bottom crust
