Cotton candy ice cream with ginger snap cookie

Ingredients
Jeni’s splendid ice-cream base
2 cup Milk
1 ¼ cup Cream
2/3 cup Sugar
2 tablespoon Corn syrup
3 table spoon Cream cheese
¼ teaspoon salt
1 table spoon plus 1 teaspoon Corn starch
2 tablespoon milk
Extras
2 teaspoon Cotton candy flavoring
Pink food coloring
Blue/purple food coloring
1 cup crumbled Ginger cookies
Instructions
- In a dish make the cornstarch slurry by combining the corn starch and 2 tablespoon milk
- In a separate bowl lightly whisk the cream cheese and salt
- In a pot bring to boil the cream, milk, sugar and corn syrup for 4 minutes exactly
- Once it’s been boiling for four minutes remove from the heat and stir in the cornstarch slurry
- Place back on the heat and stir allowing it to slightly thicken for a minute
- Pour the hot milk mixture into the bowl of cream cheese to dissolve it remove as much lumps as possible
- Add the cotton candy flavoring to the hot milk mixture (taste for flavor)
- Pour 1/3 of the mixture into a different container
- Add the pink food coloring to the 2/3 portion and the blur food coloring to the 1/3 portion
- Pour contents into two separate zip lock bag
- Prepare a bowl filled with ice
- Place the zip lock bags in the ice bath and allow the mixture to completely cool
- Churn the milk mixtures separately in an ice-cream maker
- Crush the ginger snap cookies
- Layer in a baking pan, cookies, pink cream and blue cream to create the blue swirls in the pink
- Press down parchment paper on the top surface of the ice-cream and allow to harden for at least 4 hours in the freezer.

Greedy tips:
- Ideally you would need two ice-cream canisters for this recipe so you can churn both colors one after the other (if your using the frozen bowl ice cream machines)
- For a more pastel colored ice-cream add less coloring
- You can use one color if you don’t have two canisters either pink or blue
