Candied Bacon egg and cheese sandwich

Makes three sandwiches
Ingredients
For the bacon
9 strips of bacon
6 tablespoon brown sugar
For the garlic rolls
3 rolls
3 tablespoon salted butter
1garlic clove shredded
1 teaspoon honey
½ teaspoon chopped parsley
For the eggs
2 tablespoon coconut oil
3 whole eggs
5 egg whites
5-6 tablespoon heavy cream
¼ teaspoon onion powder
Salt to taste
Black pepper to taste
¼ cup sharp cheddar
¼ cup pepper jack cheese
Instructions
For the bacon
- Preheat the oven to 400-450 degrees (anywhere between there)
- Lay the sugar on a plate and press the bacon into the sugar coating both sides
- Lay bacon in a raised baking grill tray, make sure to place foil under to catch the melting sugar and bake for 10 to 12 minutes. Make sure to keep an eye on it as it will easily burn
- Once the bacon is cooked remove from the oven and set aside to cool
For the rolls
- Place the butter, garlic, honey and parsley in a dish and warm to melt
- Mix the mixture together after the butter has melted
- Slice the rolls in half spread the mixture on the top of the bun and on one half of the slice
- Place on a lined baking sheet and toast in the oven until crispy
For the eggs
- Heat the oil in a nonstick pan
- In a bowl add the eggs, cream, onion powder, salt, and black pepper DO NOT BEAT
- Once the oil is hot pour the mixture into the pot and begin to lightly fold together
- You want to scramble using a folding method so the eggs become light and fluffy
- Once the eggs are half way cooked fold in half the cheese mixture
- Once the eggs are 90 percent cooked top with the remaining cheese mixture and allow it to melt on top
To finish
- Assemble the sandwich starting with the toasted bun, cheesy eggs, and bacon, garnish with extra chopped parsley
