Chicken Fajitas with sweet and spicy mayo

Ingredients Makes 2-4 fajita wraps

1 chicken breast cut into slices

½ cup onion slices

½ cup red pepper slices

½ cup green pepper slices

1 teaspoon oil

¼ teaspoon cumin

2 pinch salt

Sweet and spicy fajita mayo

2 tablespoon mayo

1 tablespoon honey

3 pinches of salt

½ teaspoon onion powder

¼ teaspoon cumin

¼ teaspoon paprika

¼ teaspoon chili powder

¼ teaspoon black pepper

¼ teaspoon vinegar (optional for a little more kick)

2-4 soft shell tortillas

Shredded Lettuce (optional)

Shredded cabbage (optional)

Cilantro garnish




  • Combine all the ingredients for the sweet spicy mayo and set aside in the refrigerator
  • Heat oil in a pan and sauté the onion and peppers on high heat until they begin to char
  • Add the chicken, salt and cumin powder, stir until the chicken gets a little color as well remove from the heat and set aside
  • Lightly grease another pan and toast the soft shell tortillas until golden and puffed up.
  • Assemble your fajitas with the soft shells, lettuce chicken and peppers and topped with the sweet and spicy sauce
